Quick, Easy, Low Carb Options for Busy Lives

Cream Cheese Pancakes
Low carb alternative to a breakfast favorite
Ingredients:
2 oz. cream cheese
2 eggs
1 tsp. Stevia
1 tsp of cinnamon (more or less depending on your own preference)
Directions:
I use my Ninja IQ blender - put all ingredients in and blend until smooth.
Let sit for 5 minutes to allow bubbles to settle.
Heat pan greased with 1 tbsp of butter or oil of your choice.
Depending on how big or little you want to make your pancakes, I normally pour enough for 2 pancakes at a time to cook in my medium sized skillet.
Cook for around 2 minutes and then flip - these can be tricky to flip since they are thin compared to normal pancakes - so it may take a few tries (it did for me!) Cook for 1-2 minutes on the flipped side.
Repeat with the rest of the batter.
Once complete, top with favorite toppings - fruit, PB, ... my go to is butter with sugar free syrup.
